If you follow my Food & Recipes board on Pinterest, you may have seen these images recently – they look good enough to eat!  With an eye toward spring and summer, I’m ready to add a few new recipes into our rotation.  Are you?

First up, a delicious, Mexican-inspired mini appetizer.  Second, (also Mexican-inspired), a vegetarian entree perfect for a Cinco de Mayo dinner party!  Last of all, I couldn’t share a post about recipes without including my favorite food, now could I?!  Ice cream with a twist – made with almond milk and fresh fruit, it’s vegan!
